What does MSG mean?

Monosodium Glutamate (MSG), also known as Ajinomoto, is the sodium salt of glutamic acid. Ajinomoto is actually the brand name of a Japanese company that primarily produces Monosodium Glutamate. MSG is used as a flavour enhancing agent commonly added to Chinese food and in many kinds of food products to enhance their original flavour. MSG is one of the most abundant naturally-occurring non-essential amino acids found in meat, fish and many vegetables. According to some MSG opponents the natural glutamate in our bodies is “good” the added MSG in the foods is “bad”. The added MSG in the foods tricks your tongue into making you think a certain food is high in protein and thus nutritious.
